Recipe: Winter Warming Sausage Casserole

Recipe: Winter Warming Sausage Casserole

Quick and easy winter warmer packed with roasted veg and the beans and sausages mean plenty of protein and economical too. Eat it on its own or with more green veg.

Really great recipe to cook in a big batch and freeze portions for another day or take to work for lunch.

    Fresh Ingredients
  • 2 Packets Gluten free Sausages
  • 2 red onions
  • 1 aubergine
  • 2 courgettes
  • 3 tomatoes
  • 6 mushrooms
    Store Cupboard Ingredients
  • 1 cup frozen sweet corn
  • 1 jar passata
  • 1 tin red kidney beans
  • 1 Tspn maple syrup
  • Dash balsamic vinegar
    Equipment
  • 2 baking trays
  • Knife
  • Chopping board
  • Sieve
  • Big cooking pot
  1. Preheat your oven to 180 degrees
  2. Spread the sausages out onto the baking tray.
  3. Chop the aubergine and courgettes into chunks about 1.5 cm, quarter the tomatoes, clean and quarter the mushrooms, peel and quarter the red onions.
  4. Put all the veg onto your second baking tray and drizzle with a little oil, season with salt and pepper mix around with your hands to coat them.
  5. Put both trays into the oven and set your timer for 25 minutes.
  6. Meanwhile cover the cup full of frozen sweet corn with boiling water to defrost them.
  7. Pour the jar of passata into your big cooking pot. You can put a couple of inches of water into your jar, put the lid on and shake it to get it all out. Add this to the pot too.
  8. Open the tin of beans into your sieve and run water over them until the water runs clear, shake off excess water and put the beans into your pot with the passata.
  9. Drain off the sweet corn in your sieve and add to the pot too.
  10. Add the teaspoon of maple syrup and a splash of balsamic vinegar.
  11. Go off and do something else!
  12. When the timer goes off put the pot onto your stove top on a medium heat and give it a good stir. When heated up turn down to a simmer.
  13. Check on the vegetables and sausages and when cooked to your liking tip the veg into the pot and cut the sausages into bite sized chunks and add them too.
  14. Give it all a really good stir and simmer for a few minutes until the sauce has reduced in consistency to your liking and serve. Great with shredded cabbage.
